Abstract

Prepared by esterification of 5-Z-octen-1-ol with carboxylic acids or their acid anhydride(s) or halide(s) 5-Z-octenyl esters of formula (I) are new. R = H or (m)ethyl. (I) have useful organoleptic properties due to their intensive mango flavour. (I) are used as flavourings (claimed) for foodstuffs, especially for fatty materials, bakery products, fruit products, juice concentrates, ice cream or jam.
Neue 5-Z-Octenylester der Formel in der R für Wasserstoff, Methyl oder Ethyl steht, besitzen ein intensives Mangoaroma, so daß die Verbindungen I Frucht- und Aromakompositionen zugesetzt werden können; sie wirken geschmacksverstärkend und -abrundend.
